Boots BBQ and Catering got the go-ahead from the Belgium Plan Commission, and now can ramp up its efforts to remodel a strip mall to offer several types of food.

The Plan Commission last month approved a conditional use permit for the business with one condition. The food truck must be parked on the west side of the strip mall near the corner of Main Street and Royal Avenue (Highway LL).

Boots BBQ and Catering owners Peter and Kris Raymond have grand plans for the strip mall’s 5,000 square feet.

They plan to share the kitchen space with other restaurants, and offer meeting and classroom space.

The commercial kitchen will be expanded, and they will offer space to ghost kitchens to allow for selling of meals using delivery services.

One of the restaurants that will use the space is Cocina Mi Familia, a Mexican eatery from Sheboygan. Kris said plans are to invite a pizza maker and a baker to also use the building.

Different foods would be available for takeout on different nights. Dine-in options, including eating on an outdoor patio, are slated to be added down the line, she said.

The Raymonds moved Boots BBQ and Catering from next door in a former fuel station that has since been torn down.
